Overall satisfying but I hope this can be improved to meet the expectations to a high quality, artisan product. No component in the profile is particularly pronounced (meatiness, fennel or other spices) so in current form it's just a general savoury flavour. As a start this needs salt, which I found true for Rudy's salami too.
Texture and visual presentation are spot on though, this looks and feels like the real thing.
